Refrigerated Squash Relish

This is a very easy recipe to make.

  • 1 cup diced yellow squash
  • ½ cup chopped onion
  • 1 T white sugar
  • 1 T chopped fresh basil
  • 2 T chopped red bell pepper
  • 2 T lemon
  • ¼ teaspoon sea salt
  • ½ teaspoon cracked black pepper

 

 

In a medium bowl, stir together the zucchini, onion, sugar, basil, red pepper, lemon juice, salt and pepper. Cover and refrigerate until serving.
